Kale, Apple and Fennel Salad with Coconut Yoghurt Lemon Dressing
A deliciously tangy salad that can be enjoyed on its own or as a side dish to accompany the rest of your meal.
Time: 15-20 minutes
Juice of 1 lemon, strained
1/3 cup Coco Tribe natural coconut yoghurt
1/4 cup extra virgin olive oil
1 tsp seeded mustard
1/4 tsp sea salt
1 tsp raw honey
5 cups kale, stem removed & roughly chopped
2 tbsp extra virgin olive oil
1 bulb fennel, finely sliced
1 green apple, core removed & finely sliced
1/2 cup walnuts, roughly chopped
1. Place chopped kale into a large salad bowl. Drizzle with olive oil and massage until all kale is
tender. Set aside.
2. Make dressing by whisking together all ingredients until well combined and smooth.
